Ingredients
  

  • 2 cups cooked white rice preferably day-old
  • 1 pound boneless skinless chicken breast, diced
  • 2 tablespoons vegetable oil
  • 1 cup frozen peas and carrots
  • 3 green onions chopped
  • 3 large eggs beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of vegetable oil. Add the frozen peas and carrots, and cook for 2-3 minutes until heated through.
  3. Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully cooked, about 2 minutes.
  4. Add the cooked rice to the skillet, along with the cooked chicken, soy sauce, sesame oil, and garlic powder. Stir everything together and cook for an additional 3-4 minutes, allowing the rice to get slightly crispy.
  5. Stir in the chopped green onions and cook for another minute. Taste and adjust seasoning with more salt, pepper, or soy sauce if needed.
