Preparation Instructions
  1. In a mixing bowl, combine the BBQ sauce, chipotle peppers in adobo, smoked paprika, garlic powder, onion powder, and salt to create a rich marinade. Coat the chicken thighs evenly with this mixture and let marinate for at least 1 hour, or up to 24 hours.
  2. Preheat your grill to medium-high heat. Grill the marinated chicken thighs for 5-7 minutes per side until cooked through, then let rest for 5 minutes before chopping.
  3. In a large mixing bowl, combine black beans, corn, diced tomatoes, red cabbage, carrots, green onions, and cilantro. Toss gently to combine.
  4. In a separate bowl, whisk together Greek yogurt, apple cider vinegar, garlic powder, onion powder, and dried herbs until smooth. Add smoked paprika and salt, adjusting seasoning to taste.
