Step-by-Step Instructions
  1. In a medium bowl, combine the boneless chicken breasts or thighs with soy sauce, sesame oil, fresh ginger, and minced garlic. Mix well to ensure each piece is coated. Cover and refrigerate for 20 minutes to 2 hours.
  2. While the chicken marinates, whisk together mayonnaise, sweet chili sauce, Sriracha, rice vinegar, and honey until smooth and creamy. Set aside.
  3. If using wooden skewers, soak them in water for about 30 minutes. Thread the marinated chicken pieces onto the skewers, alternating with fresh pineapple chunks.
  4. Preheat your grill to medium-high heat and cook the skewers for 3-5 minutes on each side until the chicken is cooked thoroughly. Alternatively, preheat your oven to 400°F and bake for 15-20 minutes, flipping halfway through.
