  • 1 pound boneless skinless chicken breasts
  • 1 cup cooked jasmine rice
  • 1 cup shredded green cabbage
  • 1 cup shredded carrots
  • 1/2 cup sliced cucumbers
  • 1/4 cup chopped green onions
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil for cooking
  • Sesame seeds for garnish optional

Method
 

  1. Begin by cutting the chicken breasts into bite-sized pieces. Season with salt, pepper, and garlic powder.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook for about 6-8 minutes, or until golden brown and cooked through. Remove from heat and set aside.
  3. In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, soy sauce, and rice vinegar until smooth. Adjust the spice level by adding more sriracha if desired.
  4. In serving bowls, layer the cooked jasmine rice, followed by the cooked chicken, shredded cabbage, shredded carrots, and sliced cucumbers.
  5. Drizzle the bang bang sauce over the top of each bowl and sprinkle with chopped green onions and sesame seeds if using.
