Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 2 green onions sliced (for garnish)

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a shallow bowl, mix together the flour, garlic powder, onion powder, paprika, salt, and black pepper.
  3. In another bowl, place the beaten eggs.
  4. In a third bowl, add the panko breadcrumbs.
  5. Coat each piece of chicken in the flour mixture, shaking off any excess.
  6. Dip it into the beaten eggs, then roll it in the panko breadcrumbs until fully coated.
  7. Place the coated chicken pieces on the prepared baking sheet.
  8. Bake the chicken in the preheated oven for 20-25 minutes, or until golden brown and cooked through, reaching an internal temperature of 165°F.
  9. While the chicken is baking, prepare the sauce by combining the mayonnaise, sweet chili sauce, and sriracha in a bowl. Mix until smooth.
  10. Once the chicken is done, remove it from the oven and toss it in the sauce until well coated.
  11. Serve the Bang Bang Chicken hot, garnished with sliced green onions.
