- Preheat the oven to 375°F (190°C). Gather ingredients and rinse cranberries.
- Halve the pears and remove cores to create a cavity for the filling. Place cut-side up in baking dish.
- Dot cut sides with unsalted butter and roast for about 20 minutes until fork-tender.
- In a saucepan, combine fresh cranberries and honey over medium heat, stirring until cranberries burst and form a compote (5-7 minutes).
- Remove roasted pears and fill cavities with goat cheese. Top with the cranberry mixture.
- Drizzle additional honey over assembled pears and sprinkle with cinnamon. Garnish with mint leaves if desired.
- Allow to cool slightly before serving. Enjoy warm as an appetizer or dessert.
