Preparation
- Preheat your oven to 200°C (390°F).
- Wash and cube the baking potatoes into bite-sized pieces.
- Bring a pot of salted water to a boil and par-boil the potatoes for 6–10 minutes, then drain and dry.
- In a baking dish, combine potatoes with olive oil, thyme, oregano, salt, and black pepper.
- Wrap the garlic in foil, drizzle with olive oil, and add to the baking dish.
- Roast the potatoes and garlic for 30–40 minutes, stirring halfway.
- Once golden brown, create space for feta, squeeze lemon over, and roast for an additional 15 minutes.
- Unwrap roasted garlic, mash with remaining lemon juice and chopped basil.
- Mix garlic mixture with potatoes after feta has melted.
- Drizzle with honey and garnish with fresh basil and optional chili flakes before serving.
