  • 0.5 tsp Red Chilli Flakes Optional for milder palettes.
For the Creamy Topping
  • 200 g Feta Cheese Main ingredient for creaminess.
  • 1 head Garlic Top cut off before roasting.
  • 1 whole Lemon Halved for squeezing juice.
  • 1 tbsp Honey Optional sweetness.
  • 0.25 cup Fresh Basil Chopped for garnish.

Method
 

Preparation
  1. Preheat your oven to 200°C (390°F).
  2. Wash and cube the baking potatoes into bite-sized pieces.
  3. Bring a pot of salted water to a boil and par-boil the potatoes for 6–10 minutes, then drain and dry.
  4. In a baking dish, combine potatoes with olive oil, thyme, oregano, salt, and black pepper.
  5. Wrap the garlic in foil, drizzle with olive oil, and add to the baking dish.
  6. Roast the potatoes and garlic for 30–40 minutes, stirring halfway.
  7. Once golden brown, create space for feta, squeeze lemon over, and roast for an additional 15 minutes.
  8. Unwrap roasted garlic, mash with remaining lemon juice and chopped basil.
  9. Mix garlic mixture with potatoes after feta has melted.
  10. Drizzle with honey and garnish with fresh basil and optional chili flakes before serving.
