  • 2 medium Pink Grapefruits Peeled and segmented
  • 2 cups Lightweight Greens Pea shoots, baby spinach, or watercress
  • 1/4 cup Parmesan Reggiano Shaved for topping
For the Citrus Dressing
  • 1/2 cup Fresh Squeezed Grapefruit Juice
  • 1/4 cup Extra Virgin Olive Oil High-quality preferred
  • 2 tablespoons White Balsamic Vinegar
  • 1 tablespoon Minced Shallot Finely chopped
  • 1 teaspoon Grainy Brown Mustard Can substitute with Dijon
  • to taste Kosher Salt
  • to taste Freshly Ground Black Pepper

Method
 

Preparation Steps
  1. Prepare all fresh ingredients by slicing fennel, segmenting grapefruits, and cutting avocado into chunks.
  2. In a large salad bowl, combine fennel, avocado, grapefruit, and lightweight greens. Toss gently.
  3. For the dressing, combine grapefruit juice, olive oil, balsamic vinegar, shallot, mustard, salt, and pepper in a jar or bowl. Emulsify well.
  4. Drizzle dressing over salad and gently toss to coat. Adjust seasoning if needed.
  5. Garnish with shaved Parmesan and fennel fronds, then serve immediately or chill briefly.
