- Preheat your oven to 350°F (175°C) and grease an 8x5-inch loaf pan.
- In a small bowl, whisk together ¼ cup of brown sugar and 1 teaspoon of ground cinnamon.
- In a large mixing bowl, whisk together 2 large eggs and ¾ cup of granulated sugar. Then add ½ cup of melted butter and 1 teaspoon of vanilla extract.
- Sift in 2 cups of all-purpose flour, 1 teaspoon of baking powder, ½ teaspoon of baking soda, and ½ teaspoon of salt.
- Gently fold in 1 cup of chopped apples.
- Pour half of the batter into the prepared loaf pan, sprinkle with ¾ of the cinnamon-sugar mixture, add the remaining batter, and top with the rest of the cinnamon sugar.
- Bake for 35-45 minutes until golden brown and a toothpick comes out clean.
- Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
