- Preheat the oven to 350°F (175°C).
- Slice each croissant in half horizontally.
- In a mixing bowl, combine goat cheese, honey, and cinnamon until smooth.
- Spread the goat cheese mixture on the bottom half of each croissant.
- Layer thin slices of apples on top of the cheese.
- Add arugula on top of the apple slices, if desired.
- Bake the assembled sandwiches for 5-7 minutes or until warmed through.
- Remove from the oven, let cool slightly, and serve.
