  • 0.5 cup Vegetable Oil or melted coconut oil
  • 1 large Egg room temperature
  • 1 teaspoon Vanilla Extract pure for best taste
  • 0.5 cup Apple Butter homemade versions are great

  • 0.25 cup Brown Sugar or coconut sugar
  • 1 teaspoon Cinnamon
Streusel Topping
  • 0.5 cup Flour all-purpose or whole wheat
  • 0.25 cup Brown Sugar or coconut sugar
  • 0.25 cup Cold Butter
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line muffin tin with paper liners or grease.
  2. In a large mixing bowl, whisk together flour, baking powder, salt, sugar, and cinnamon.
  3. In a separate bowl, whisk together milk, oil, egg, and vanilla until smooth.
  4. Combine wet and dry ingredients, mixing gently until just combined.
  5. Stir together apple butter, brown sugar, and cinnamon in a small bowl for the swirl.
  6. In another bowl, mix flour, brown sugar, cold butter, cinnamon, and salt for the streusel.
  7. Fill muffin cups one-third full, add a teaspoon of apple butter mixture, then top with more batter.
  8. Sprinkle streusel topping over each muffin. Bake for 20-22 minutes until golden.
  9. Let cool in the pan for 5 minutes before transferring to a wire rack.
