Preparation
- Preheat your oven to 375°F (190°C). Line muffin tin with paper liners or grease.
- In a large mixing bowl, whisk together flour, baking powder, salt, sugar, and cinnamon.
- In a separate bowl, whisk together milk, oil, egg, and vanilla until smooth.
- Combine wet and dry ingredients, mixing gently until just combined.
- Stir together apple butter, brown sugar, and cinnamon in a small bowl for the swirl.
- In another bowl, mix flour, brown sugar, cold butter, cinnamon, and salt for the streusel.
- Fill muffin cups one-third full, add a teaspoon of apple butter mixture, then top with more batter.
- Sprinkle streusel topping over each muffin. Bake for 20-22 minutes until golden.
- Let cool in the pan for 5 minutes before transferring to a wire rack.
