- Preheat your oven to 350°F (175°C). Grease a standard loaf pan.
- In a medium mixing bowl, whisk together the flour, cinnamon, nutmeg, salt, and baking powder.
- In a large mixing bowl, whisk together the eggs and granulated sugar until smooth and frothy. Then add vegetable oil, applesauce, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and fold gently with a spatula. Then fold in chopped apples and half of the pecans.
- Pour the batter into the greased loaf pan. Mix the remaining pecans with sugar and cinnamon, and sprinkle over the batter.
- Bake for 55 to 60 minutes until a toothpick comes out clean. Let cool in the pan for 10 to 15 minutes.
- Invert the pan onto a wire rack to release the bread, and let it cool before slicing.
