Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan.
  2. In a medium mixing bowl, whisk together the flour, cinnamon, nutmeg, salt, and baking powder.
  3. In a large mixing bowl, whisk together the eggs and granulated sugar until smooth and frothy. Then add vegetable oil, applesauce, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients and fold gently with a spatula. Then fold in chopped apples and half of the pecans.
  5. Pour the batter into the greased loaf pan. Mix the remaining pecans with sugar and cinnamon, and sprinkle over the batter.
  6. Bake for 55 to 60 minutes until a toothpick comes out clean. Let cool in the pan for 10 to 15 minutes.
  7. Invert the pan onto a wire rack to release the bread, and let it cool before slicing.
