- Begin by bringing a large pot of salted water to a rolling boil. Carefully add about 10 lasagna noodles and cook until al dente, typically around 8-10 minutes. Drain the noodles in a colander and rinse them under cold water to stop the cooking process. Set the noodles aside on a clean surface to cool and dry completely.
- In a mixing bowl, combine 1 cup of ricotta cheese with 2 large eggs, and fold in ½ cup each of freshly grated Parmesan, Romano, Asiago, and mozzarella cheeses. Sprinkle in a teaspoon of Italian seasoning for flavor, mixing until everything is well incorporated.
- Take a cooled lasagna noodle and spread a generous layer of the cheese filling along its length. Carefully roll the noodle tightly from one end to the other, ensuring the filling is well contained inside. Place the rolled lasagna on a parchment-lined baking sheet and repeat the process with the remaining noodles. For best results, freeze the rolls for 1-2 hours.
- In a shallow dish, beat 2 eggs until well mixed. In another bowl, combine 1 cup of Italian breadcrumbs with 2 tablespoons of olive oil. Microwave the breadcrumb mixture for 30 seconds, stirring to crisp it up, then mix in ¼ cup of finely grated Parmesan.
- Remove the rolled noodles from the freezer. Dip each lasagna roll in the beaten egg, making sure it’s fully coated, then roll it in the breadcrumb mixture to cover all sides.
- Preheat your air fryer to 400°F. Lightly spray the air fryer basket with olive oil to prevent sticking. Place the lasagna frittas in a single layer, ensuring they have space to cook evenly. Lightly spray the tops of the rolls with olive oil, and air fry for 14-16 minutes, flipping halfway through.
- If you prefer a different cooking method, heat ½ inch of canola oil in a large skillet over medium heat. Once hot, add the lasagna frittas and fry for about 2 minutes on each side, or until they reach a crispy, golden brown texture.
