A delicious and healthy Walnut and Date Cake that is naturally sweetened and easy to make.

Ingredients

  • 2 cups pitted Medjool dates, chopped
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 1 cup walnuts, chopped
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups whole wheat flour
  • 1/4 cup coconut oil, melted
  • 3 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
  2. In a bowl, combine the chopped dates and boiling water. Let it sit for about 10 minutes until the dates soften. Stir in the baking soda and set aside.
  3. In a large mixing bowl, combine the walnuts, vanilla extract, cinnamon, and salt.
  4. In another bowl, whisk together the flour and melted coconut oil until well combined.
  5. Add the date mixture to the flour mixture, followed by the eggs. Mix until just combined, being careful not to overmix.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • For added flavor, consider adding a teaspoon of nutmeg or a handful of chocolate chips to the batter.
  • You can also substitute half of the walnuts with pecans for a different nutty flavor.
