- 2 cups pitted Medjool dates, chopped
- 1 cup boiling water
- 1 teaspoon baking soda
- 1 cup walnuts, chopped
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 1/2 cups whole wheat flour
- 1/4 cup coconut oil, melted
- 3 large eggs
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
- In a bowl, combine the chopped dates and boiling water. Let it sit for about 10 minutes until the dates soften. Stir in the baking soda and set aside.
- In a large mixing bowl, combine the walnuts, vanilla extract, cinnamon, and salt.
- In another bowl, whisk together the flour and melted coconut oil until well combined.
- Add the date mixture to the flour mixture, followed by the eggs. Mix until just combined, being careful not to overmix.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
