A delicious and easy-to-make taco rice bowl that combines seasoned ground beef, black beans, corn, and fresh toppings over a bed of rice.

Ingredients

  • 2 cups cooked white rice
  • 1 pound ground beef (or ground turkey)
  • 1 packet taco seasoning mix (1 ounce)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup sliced jalapeños (optional)
  • 1 avocado, diced (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
  2. Stir in the taco seasoning mix and follow the package instructions, usually adding about 2/3 cup of water. Simmer for 5-10 minutes until the mixture thickens.
  3. While the beef is cooking, prepare the rice according to package instructions if not already cooked.
  4. In a large bowl or individual serving bowls, layer the cooked rice as the base.
  5. Top the rice with the seasoned beef, black beans, corn, diced tomatoes, shredded lettuce, and shredded cheddar cheese.
  6. Add a dollop of sour cream on top and garnish with jalapeños, diced avocado, and fresh cilantro if desired.
  7. Serve immediately and enjoy!

Notes

  • For a vegetarian option, substitute the ground beef with crumbled tofu or extra beans and add more vegetables like bell peppers or zucchini.
  • Spice it up by adding hot sauce or diced green chilies to the beef mixture for an extra kick.
