A creamy and flavorful street corn pasta salad that combines rotini pasta with fresh corn, cherry tomatoes, and a zesty dressing.

Ingredients

  • 8 ounces rotini pasta
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cilantro, chopped (optional)
  • 1/4 cup crumbled cotija cheese (or feta cheese)

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, corn, cherry tomatoes, and red onion.
  3. In a separate bowl, whisk together the mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and black pepper until smooth.
  4. Pour the dressing over the pasta mixture and toss until everything is well coated.
  5. Gently fold in the cilantro and cotija cheese, if using.
  6. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve chilled or at room temperature, garnished with additional cilantro and cheese if desired.

Notes

  • For a spicy kick, add diced jalapeños or a dash of hot sauce to the dressing.
  • You can substitute the rotini pasta with any pasta shape you prefer, such as penne or fusilli.
