Delicious spice rubbed buffalo chicken thighs drizzled in a flavorful sauce.

  • 2 pounds bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup buffalo sauce
  • 1 tablespoon unsalted butter, melted
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F. Line a baking sheet with aluminum foil and place a wire rack on top.
  2. In a large bowl, combine olive oil, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well to form a spice rub.
  3. Pat the chicken thighs dry with paper towels. Rub the spice mixture evenly over each thigh, ensuring they are well coated.
  4. Place the chicken thighs skin-side up on the wire rack. Bake in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F and the skin is crispy.
  5. While the chicken is baking, mix the buffalo sauce and melted butter in a small bowl. Set aside.
  6. Once the chicken is done, remove it from the oven and let it rest for 5 minutes. Drizzle the buffalo sauce mixture over the chicken thighs before serving.
  7. Garnish with chopped fresh parsley if desired.

  • For extra flavor, marinate the chicken in the spice rub for at least 30 minutes or overnight in the refrigerator.
  • For a milder version, reduce the cayenne pepper or use a mild buffalo sauce.
