1 cup granulated sugar
½ cup unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
½ cup buttermilk
½ cup boiling water
1 cup powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract
Food coloring (blue, pink, yellow, etc.)
Sprinkles (optional)
Instructions
Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
Add the softened butter, eggs, vanilla extract, and buttermilk to the dry ingredients. Beat on medium speed until well combined.
Carefully stir in the boiling water until the batter is smooth (the batter will be thin).
Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
In a separate bowl, mix the powdered sugar, milk, and vanilla extract until smooth. Divide the frosting into separate bowls and add food coloring to each to create different colors.
Frost the cooled cupcakes with the colored frosting, layering colors if desired to mimic a snow cone.
Top with sprinkles if desired for an extra festive touch.
Notes
For a tropical twist, add coconut extract to the frosting or sprinkle shredded coconut on top.
Substitute the cocoa powder with a flavored cake mix (like vanilla or lemon) for a different base flavor.
