Shrimp Scampi Pasta Bake is a delicious and comforting dish that combines shrimp, pasta, and a flavorful sauce, topped with melted cheese.

  • 8 ounces penne pasta
  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup dry white wine
  • 1 lemon, juiced and zested
  • 1/4 cup fresh parsley, chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking until fragrant (about 1 minute).
  3. Add the shrimp to the skillet and season with salt and pepper. Cook until the shrimp turn pink, about 2-3 minutes per side.
  4. Stir in the cherry tomatoes, white wine, lemon juice, and lemon zest. Cook for an additional 3-4 minutes until the tomatoes soften.
  5. In a large mixing bowl, combine the cooked pasta, shrimp mixture, and chopped parsley. Mix well to combine all ingredients.
  6. Transfer the mixture to a greased 9×13 inch baking dish. Top with shredded mozzarella and grated Parmesan cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
  8. Let it cool for a few minutes before serving. Garnish with additional parsley if desired.

  • For a creamier version, add 1/2 cup of heavy cream to the shrimp mixture before combining with the pasta.
  • You can substitute the shrimp with cooked chicken or a mix of vegetables for a vegetarian option.
