A delicious and easy-to-make Scallion Chicken recipe featuring tender chicken thighs coated in a flavorful sauce.

Ingredients

Scale
  • 2 pounds bone-in, skin-on chicken thighs
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 bunch scallions, chopped (about 1 cup)
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 400°F. Line a baking dish with aluminum foil for easy cleanup.
  2. In a large bowl, combine the vegetable oil, salt, black pepper, garlic powder, and onion powder. Add the chicken thighs and toss to coat evenly.
  3. Place the chicken thighs skin-side up in the prepared baking dish.
  4. In a separate bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, scallions, ginger, and garlic. Pour this mixture over the chicken thighs.
  5. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is crispy. Baste the chicken with the sauce halfway through cooking for extra flavor.
  6. Once cooked, remove the chicken from the oven and let it rest for 5 minutes before serving.

Notes

  • For a spicier kick, add 1 teaspoon of red pepper flakes to the sauce mixture.
  • Serve the chicken over steamed rice or quinoa to soak up the delicious sauce.
