Delicious salted butterscotch cookies that are soft in the center and slightly crispy on the edges, perfect for satisfying your sweet tooth.

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup butterscotch chips
  • 1/2 teaspoon sea salt (for sprinkling)

Instructions

  1. Preheat your oven to 350°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, using an electric mixer, beat the softened butter, brown sugar, and granulated sugar until creamy and smooth, about 2-3 minutes.
  4. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Fold in the butterscotch chips.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Sprinkle a small pinch of sea salt on top of each cookie.
  9. Bake for 10-12 minutes, or until the edges are golden brown but the centers are still soft.
  10. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chewier cookie, chill the dough for at least 30 minutes before baking.
  • You can substitute chocolate chips for butterscotch chips for a different flavor.
  • For a nutty twist, add 1/2 cup of chopped pecans or walnuts to the dough.
