A delightful dessert combining the tartness of lemon with the sweetness of raspberries, perfect for any occasion.

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon baking powder
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a medium bowl, mix the flour, powdered sugar, and salt.
  3. Add the softened butter and blend until the mixture resembles coarse crumbs.
  4. Press this mixture evenly into the bottom of the prepared baking dish.
  5. Bake for 15 minutes.
  6. While the crust is baking, in a separate bowl, whisk together the eggs, granulated sugar, lemon zest, lemon juice, and baking powder until smooth.
  7. Gently fold in the raspberries.
  8. After the crust has baked for 15 minutes, remove it from the oven and pour the raspberry lemon mixture over the hot crust.
  9. Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly golden.
  10. Allow the bars to cool completely in the pan on a wire rack.
  11. Once cooled, dust with additional powdered sugar, cut into squares, and serve.

Notes

  • For a twist, try adding a teaspoon of vanilla extract to the filling for extra flavor.
  • You can also substitute the raspberries with blueberries or strawberries for a different fruit variation.
