- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1/2 teaspoon baking powder
- 1 cup fresh raspberries
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a medium bowl, mix the flour, powdered sugar, and salt.
- Add the softened butter and blend until the mixture resembles coarse crumbs.
- Press this mixture evenly into the bottom of the prepared baking dish.
- Bake for 15 minutes.
- While the crust is baking, in a separate bowl, whisk together the eggs, granulated sugar, lemon zest, lemon juice, and baking powder until smooth.
- Gently fold in the raspberries.
- After the crust has baked for 15 minutes, remove it from the oven and pour the raspberry lemon mixture over the hot crust.
- Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and slightly golden.
- Allow the bars to cool completely in the pan on a wire rack.
- Once cooled, dust with additional powdered sugar, cut into squares, and serve.
