1 cup rolled oats
1 cup cottage cheese
4 large eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon honey or maple syrup (optional)
Cooking spray or oil for the pan
Instructions
In a blender, combine the rolled oats, cottage cheese, eggs, vanilla extract, baking powder, salt, and honey or maple syrup if using. Blend until smooth and well combined, about 30 seconds.
Preheat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or oil.
Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
Serve warm with your favorite toppings such as fresh fruit, yogurt, or nut butter.
Notes
For added flavor, mix in a teaspoon of cinnamon or a handful of chocolate chips to the batter.
To make these pancakes dairy-free, substitute cottage cheese with a dairy-free yogurt or a plant-based protein powder mixed with water.
