Delicious and easy-to-make Peach Cobbler Cookies that combine the flavors of peach cobbler in a cookie form.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh peaches (about 2 medium peaches)
  • 1/2 cup rolled oats
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Gently fold in the diced peaches, rolled oats, and chopped pecans (if using) until evenly distributed.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a twist, try substituting the peaches with diced apples or blueberries.
  • You can drizzle a simple glaze made from powdered sugar and milk over the cooled cookies for added sweetness.
  • For a spicier flavor, add a pinch of nutmeg or ginger to the dry ingredients.
