8 ounces of penne pasta
2 tablespoons of olive oil
2 cloves of garlic, minced
1 can (14.5 ounces) of diced tomatoes
1 teaspoon of dried oregano
1 teaspoon of sugar
Salt and pepper to taste
1 cup of fresh mozzarella cheese, cubed
1/4 cup of grated Parmesan cheese
Fresh basil leaves for garnish
Instructions
Cook the penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the diced tomatoes (with their juices), oregano, sugar, salt, and pepper to the skillet. Stir well and let it simmer for about 10 minutes, allowing the flavors to meld.
Preheat your oven to 375°F (190°C).
Stir the cooked pasta into the tomato sauce, mixing until well combined.
Gently fold in the fresh mozzarella cubes.
Transfer the pasta mixture into a baking dish and sprinkle the grated Parmesan cheese evenly on top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
Notes
For added flavor, consider adding cooked Italian sausage or ground beef to the sauce.
