Parmesan Pesto Roasted Potatoes are a delicious and easy side dish, perfect for any meal.

  • 2 pounds baby potatoes, halved
  • 1/4 cup pesto (store-bought or homemade)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the halved baby potatoes, pesto, olive oil, garlic powder, salt, and black pepper. Toss until the potatoes are evenly coated.
  3. Spread the coated potatoes in a single layer on the prepared baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and fork-tender, stirring halfway through for even cooking.
  5. Remove the potatoes from the oven and sprinkle the grated Parmesan cheese over the top. Return to the oven for an additional 5 minutes, or until the cheese is melted and slightly crispy.
  6. Garnish with fresh basil leaves if desired and serve warm.
