A delicious Mixed Berry Tart that combines a buttery crust with a creamy filling and fresh mixed berries.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, chilled and cubed
  • 1 large egg yolk
  • 3 tablespoons cold water
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the flour, powdered sugar, and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Stir in the egg yolk and cold water, mixing until the dough comes together. If needed, add more water, one teaspoon at a time.
  4. Press the dough into a 9-inch tart pan evenly across the bottom and up the sides. Prick the bottom with a fork.
  5. Bake for 20-25 minutes or until the crust is lightly golden. Remove from the oven and let it cool completely.
  6. In a medium bowl, whip the heavy cream until soft peaks form. In another bowl, mix the mascarpone cheese, sugar, and vanilla until smooth.
  7. Gently fold the whipped cream into the mascarpone mixture until well combined.
  8. Spread the filling evenly into the cooled tart crust. Top with mixed berries, arranging them as desired.
  9. Chill the tart in the refrigerator for at least 1 hour before serving to set the filling.

Notes

  • For a gluten-free option, substitute the all-purpose flour with a gluten-free flour blend.
  • Experiment with different fruits such as peaches or kiwi for a seasonal twist.
