Delicious Honey Oatmeal Cookies that are irresistibly tasty and perfect for any occasion.

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1/2 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the honey, egg, and vanilla extract to the butter mixture, and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the rolled oats and raisins or chocolate chips if using.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chewier cookie, chill the dough in the refrigerator for 30 minutes before baking.
  • Substitute half of the rolled oats with chopped nuts or seeds for added crunch and flavor.
