A delicious and hearty skillet dish made with ground beef, zucchini, and sweet potatoes, perfect for a quick weeknight dinner.

  • 1 pound ground beef
  • 1 medium sweet potato, peeled and diced (about 1 ½ cups)
  • 2 medium zucchinis, diced (about 2 cups)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • ¼ cup beef broth or water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes until softened.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the diced sweet potato, smoked paprika, oregano, salt, and black pepper. Pour in the beef broth or water, cover the skillet, and reduce the heat to medium-low. Cook for about 10 minutes, stirring occasionally, until the sweet potatoes are tender.
  5. Add the diced zucchini to the skillet, stir to combine, and cover again. Cook for an additional 5-7 minutes until the zucchini is tender.
  6. Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.

Notes

  • For added flavor, sprinkle some red pepper flakes for a bit of heat or top with shredded cheese before serving.
  • Substitute ground turkey or chicken for a leaner option, or use a plant-based ground meat alternative for a vegetarian version.
