A delicious and easy recipe for Garlic Tomato Chicken topped with melted mozzarella cheese, served with dumplings.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish (optional)
  • 1 package (16 ounces) refrigerated dumplings (or homemade if preferred)

Instructions

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the diced tomatoes (with their juice), oregano, basil, and red pepper flakes (if using). Stir to combine and let simmer for about 5 minutes.
  5. Return the chicken to the skillet, spooning some of the tomato mixture over the top. Sprinkle the shredded mozzarella cheese evenly over the chicken. Cover the skillet and cook for an additional 3-5 minutes, or until the cheese is melted and bubbly.
  6. While the chicken is cooking, prepare the dumplings according to package instructions.
  7. Serve the chicken hot, garnished with fresh basil leaves if desired, alongside the dumplings.

Notes

  • For added flavor, marinate the chicken in olive oil, garlic, and herbs for 30 minutes before cooking.
  • Substitute the mozzarella cheese with provolone or cheddar for a different taste.
