1 medium onion, diced
2 cloves garlic, minced

4 cups coleslaw mix (shredded cabbage and carrots)
3 tablespoons soy sauce

2 green onions, sliced
1 teaspoon sriracha (optional)

Instructions
In a large skillet, heat the sesame oil over medium heat. Add the ground pork or turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Add the diced onion, minced garlic, and ginger to the skillet. Sauté for 3-4 minutes until the onion is translucent.
Stir in the coleslaw mix and cook for another 5 minutes, stirring occasionally, until the cabbage is tender.
Pour in the soy sauce and rice vinegar, mixing well to combine. Cook for an additional 2-3 minutes to heat through.
Season with salt, pepper, and sriracha (if using) to taste. Remove from heat.
