A simple and delicious recipe for Easy Sushi Bake that combines sushi rice, imitation crab, and creamy toppings, baked to perfection.

Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 pound imitation crab meat, shredded
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha (adjust to taste)
  • 1/2 cup cream cheese, softened
  • 1/4 cup green onions, chopped
  • 1 sheet nori, cut into small strips
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot, and cook according to package instructions.
  3. Once the rice is cooked, transfer it to a large bowl. In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until dissolved. Pour this mixture over the rice and gently fold to combine. Let the rice cool slightly.
  4. In a separate bowl, mix the shredded imitation crab meat, mayonnaise, sriracha, and cream cheese until well combined.
  5. In a baking dish, spread the sushi rice evenly across the bottom. Layer the crab mixture on top of the rice.
  6. Bake in the preheated oven for 15-20 minutes, or until the top is slightly golden and bubbly.
  7. Remove from the oven and sprinkle with chopped green onions, nori strips, and sesame seeds if using.
  8. Allow to cool for a few minutes before serving. Scoop into bowls and enjoy!

Notes

  • For a spicy kick, add more sriracha to the crab mixture or top with sliced jalapeños.
  • You can substitute the imitation crab with cooked shrimp or cooked salmon for a different flavor profile.
