Ingredients
Scale
2 cups shredded rotisserie chicken
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
8 small corn or flour tortillas
1 cup shredded lettuce
1 cup diced tomatoes
1 cup shredded cheese (cheddar or Mexican blend)
1/2 cup sour cream
1/4 cup fresh cilantro, chopped
Lime wedges for serving
Instructions
In a large skillet, heat the olive oil over medium heat. Add the shredded rotisserie chicken, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir to combine and cook for about 5 minutes, until heated through.
While the chicken is heating, warm the tortillas in a separate skillet or microwave until pliable.
To assemble the tacos, place a generous portion of the chicken mixture onto each tortilla.
Top each taco with shredded lettuce, diced tomatoes, and shredded cheese.
Add a dollop of sour cream and sprinkle with fresh cilantro.
Serve with lime wedges on the side for squeezing over the tacos.
Notes
For a spicier kick, add diced jalapeños or a splash of hot sauce to the chicken mixture.
Try using different proteins like shredded beef or black beans for a vegetarian option.
