This Easy Low Carb Pizza Casserole is a delicious and satisfying dish that captures all the flavors of pizza without the carbs.

Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (14-ounce) can diced tomatoes, drained
  • 1 (8-ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup sliced pepperoni
  • 2 cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. In a large skillet over medium heat, cook the ground beef or sausage until browned. Drain excess fat.
  3. Add the onion, bell pepper, and garlic, cooking until softened, about 5 minutes.
  4. Stir in the diced tomatoes, tomato sauce, oregano, basil, salt, and pepper. Simmer for 5 minutes.
  5. In a greased 9×13-inch baking dish, layer half of the meat mixture.
  6. Top with half of the pepperoni and half of the mozzarella cheese.
  7. Repeat the layers with the remaining meat mixture, pepperoni, and mozzarella cheese.
  8. Sprinkle the Parmesan cheese on top.
  9. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  10. Let it cool for 5-10 minutes before serving. Garnish with fresh basil leaves if desired.

Notes

  • For a spicier version, add crushed red pepper flakes to the meat mixture.
  • You can also substitute the ground beef or sausage with ground turkey or chicken for a lighter option.
