1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/4 cup powdered sugar
1/2 cup unsalted butter, softened
1/4 teaspoon salt
1 large egg yolk
1/4 cup heavy cream
1 cup granulated sugar
1/4 cup water
1/2 cup unsalted butter (cut into pieces)
1 teaspoon vanilla extract
1/2 teaspoon sea salt
4 ounces semi-sweet chocolate, chopped
1 tablespoon butter (for chocolate filling)
Sea salt flakes (for topping)
Instructions
Preheat your oven to 350°F (175°C). In a medium bowl, combine the flour, cocoa powder, powdered sugar, softened butter, and salt. Mix until crumbly. Add the egg yolk and mix until the dough comes together.
Press the dough into the bottom and up the sides of a tart pan (about 9 inches in diameter). Prick the bottom with a fork to prevent bubbling. Bake for 15-20 minutes or until set. Let cool completely.
In a saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar dissolves, then stop stirring and let it boil until it turns a deep amber color (about 8-10 minutes).
Remove from heat and carefully whisk in the heavy cream (it will bubble up). Add the pieces of butter, vanilla extract, and sea salt, stirring until smooth. Let the caramel cool slightly.
Pour the caramel into the cooled tart shell and refrigerate for at least 30 minutes to set.
While the caramel is setting, prepare the chocolate filling. In a small saucepan, heat the chopped chocolate and 1 tablespoon of butter over low heat, stirring until melted and smooth.
Once the caramel is set, pour the melted chocolate over the caramel layer. Use a spatula to smooth it out evenly.
Sprinkle sea salt flakes on top for garnish. Refrigerate for another 30 minutes to set the chocolate.
Slice and serve chilled or at room temperature. Enjoy!
Notes
For a richer flavor, use dark chocolate instead of semi-sweet chocolate.
Add a layer of crushed nuts (like pecans or almonds) on top of the caramel before adding the chocolate for added crunch.
