A quick and delicious chicken stir fry recipe that is perfect for a weeknight dinner.

  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups mixed bell peppers, sliced (red, yellow, and green)
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes, stirring frequently, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the bell peppers, broccoli, and snap peas. Stir-fry the vegetables for about 4-5 minutes until they are tender-crisp.
  3. Add the minced garlic and ginger to the skillet, stirring for about 30 seconds until fragrant.
  4. In a small bowl, whisk together the soy sauce, honey, sesame oil, cornstarch, and water. Pour this sauce over the vegetables in the skillet and stir well to combine.
  5. Return the cooked chicken to the skillet and toss everything together until the chicken is heated through and the sauce thickens slightly, about 2-3 minutes.
  6. Serve the stir fry over cooked rice or noodles.

Notes

  • For added heat, include sliced jalapeños or a dash of red pepper flakes.
  • Substitute the chicken with tofu or shrimp for a different protein option.
