A quick and delicious recipe for Easy Beef Teriyaki, perfect for a weeknight dinner.

  • 1 pound flank steak, thinly sliced against the grain
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons vegetable oil
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 green onions, chopped
  • Cooked white rice, for serving

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger. Add the sliced beef and marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  2. In a small bowl, mix cornstarch and water until smooth. Set aside.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Remove the beef from the marinade (reserve the marinade) and stir-fry for about 3-4 minutes until browned. Remove the beef from the skillet and set aside.
  4. In the same skillet, add broccoli, bell pepper, and carrot. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.
  5. Return the beef to the skillet and pour in the reserved marinade. Bring to a simmer, then stir in the cornstarch mixture. Cook for another 2-3 minutes until the sauce thickens.
  6. Serve the beef teriyaki over cooked white rice and garnish with chopped green onions.

Notes

  • For a healthier option, substitute the white rice with cauliflower rice.
  • Add other vegetables like snap peas or mushrooms for extra flavor and nutrition.
