A simple and delicious recipe for Crockpot Chicken Fajitas that is perfect for busy weeknights.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 bell pepper, sliced (any color)
  • 1 onion, sliced
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 packet (1 ounce) fajita seasoning mix
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro, lime wedges

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the sliced bell pepper and onion on top of the chicken.
  3. Pour the can of diced tomatoes over the vegetables and chicken.
  4. Sprinkle the fajita seasoning mix evenly over the top.
  5. Drizzle the olive oil over the mixture, and season with salt and pepper to taste.
  6. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  7. Once cooked, shred the chicken using two forks and stir to combine with the vegetables and juices.
  8. Serve the chicken fajita mixture in warm flour tortillas and add your favorite toppings.
