4 large eggs
1/4 cup almond flour
1/4 cup coconut flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup fresh blueberries
1 tablespoon sweetener (optional)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the cottage cheese and eggs. Mix until smooth and well blended.
Add the almond flour, coconut flour, baking powder, salt, and vanilla extract to the bowl. Stir until the mixture is fully combined.
Gently fold in the fresh blueberries and sweetener if using, being careful not to break the berries.
Spoon the batter onto the prepared baking sheet, forming 8 equal mounds.
Bake in the preheated oven for 25-30 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Allow the cloud bread to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
