2 pounds boneless, skinless chicken breasts
1/4 cup lime juice (about 2 limes)
2 tablespoons olive oil
2 tablespoons honey
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional, for extra heat)
Fresh cilantro, chopped (for garnish)
Instructions
In a large bowl, whisk together lime juice, olive oil, honey, chili powder, cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper if using.
Add the chicken breasts to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
Preheat your grill or grill pan over medium-high heat.
Remove the chicken from the marinade and discard the marinade.
Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is cooked through.
Remove the chicken from the grill and let it rest for 5 minutes before slicing.
Garnish with fresh cilantro before serving.
Notes
For a smoky flavor, add 1 teaspoon of smoked paprika to the marinade.
