Chi-Chi’s Baked Chicken Chimichangas are irresistible baked tortillas filled with a savory mixture of chicken, beans, and cheese, perfect for a delicious meal.

  • 2 cups cooked, shredded chicken
  • 1 cup refried beans
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 large flour tortillas
  • 1/4 cup olive oil
  • 1/2 cup sour cream (for serving)
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the shredded chicken, refried beans, cheddar cheese, salsa, cumin, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Lay a tortilla flat on a clean surface. Spoon about 1/3 cup of the chicken mixture onto the center of the tortilla. Fold in the sides and roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.
  4. Place the rolled chimichangas seam-side down on a baking sheet lined with parchment paper. Brush the tops with olive oil to help them crisp up in the oven.
  5. Bake in the preheated oven for 20-25 minutes, or until the chimichangas are golden brown and crispy.
  6. Remove from the oven and let cool for a few minutes. Serve with sour cream and garnish with fresh cilantro.

Notes

  • For a spicier version, add diced jalapeños or a dash of hot sauce to the chicken mixture.
  • Substitute the chicken with ground beef or turkey for a different flavor profile.
