- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh or frozen cherries, pitted and halved
- 1/2 teaspoon ground cinnamon
- 1/4 cup brown sugar (for topping)
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
- In another bowl, combine the melted butter, buttermilk, eggs, and vanilla extract. Mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Gently fold in the cherries and ground cinnamon.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- In a small bowl, mix the brown sugar with a pinch of cinnamon. Sprinkle this mixture over the tops of the muffins.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a sweeter twist, try adding a tablespoon of almond extract to the wet ingredients.
