In a medium saucepan, bring the chicken broth and water to a boil. Gradually whisk in the grits and reduce the heat to low. Cook for about 5 minutes, stirring occasionally, until the grits are thickened.
Stir in the shredded cheddar cheese, milk, salt, and black pepper into the grits. Mix until the cheese is melted and the mixture is creamy.
To serve, spoon the cheesy grits onto plates and top with sliced Cajun chicken. Garnish with chopped parsley.
