  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1 cup water
  • 1 cup quick-cooking grits
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Start by seasoning the chicken breasts with Cajun seasoning on both sides. Allow them to sit for about 10 minutes to absorb the flavors.
  2. In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  3. In a medium saucepan, bring the chicken broth and water to a boil. Gradually whisk in the grits and reduce the heat to low. Cook for about 5 minutes, stirring occasionally, until the grits are thickened.
  4. Stir in the shredded cheddar cheese, milk, salt, and black pepper into the grits. Mix until the cheese is melted and the mixture is creamy.
  5. To serve, spoon the cheesy grits onto plates and top with sliced Cajun chicken. Garnish with chopped parsley.

Notes

  • For extra flavor, marinate the chicken in the Cajun seasoning for a few hours or overnight.
  • You can substitute the cheddar cheese with pepper jack for a spicier kick.
