Ingredients
Scale
2 lbs boneless, skinless chicken thighs
1/2 cup unsalted butter, melted
1/4 cup fresh lemon juice (about 2 lemons)
1 tablespoon lemon zest
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine melted butter, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, black pepper, and red pepper flakes. Whisk until well combined.
Place the chicken thighs in a 9×13 inch baking dish. Pour the lemon butter mixture over the chicken, ensuring each piece is well coated.
Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
For a golden finish, broil the chicken on high for an additional 2-3 minutes.
Remove from the oven and let it rest for 5 minutes. Garnish with chopped fresh parsley before serving.
Notes
For added flavor, marinate the chicken in the lemon butter mixture for 1-2 hours before baking.
Substitute chicken thighs with boneless, skinless chicken breasts for a leaner option. Adjust cooking time as needed.
