A zesty and flavorful baked chicken dish featuring a delicious lemon butter sauce.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 tablespoon lemon zest
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine melted butter, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, black pepper, and red pepper flakes. Whisk until well combined.
  3. Place the chicken thighs in a 9×13 inch baking dish. Pour the lemon butter mixture over the chicken, ensuring each piece is well coated.
  4. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  5. For a golden finish, broil the chicken on high for an additional 2-3 minutes.
  6. Remove from the oven and let it rest for 5 minutes. Garnish with chopped fresh parsley before serving.

Notes

  • For added flavor, marinate the chicken in the lemon butter mixture for 1-2 hours before baking.
  • Substitute chicken thighs with boneless, skinless chicken breasts for a leaner option. Adjust cooking time as needed.
