A delicious and moist Apple Coffee Cake filled with creamy cream cheese, perfect for breakfast or dessert.

  • 1 cup sour cream
  • 2 cups peeled and diced apples (about 2 medium apples)
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar (for filling)
  • 1 large egg (for filling)
  • 1 teaspoon vanilla extract (for filling)
  • 1/2 cup brown sugar (for topping)
  • 1/2 cup rolled oats (for topping)
  • 1/4 cup all-purpose flour (for topping)
  • 1 teaspoon ground cinnamon (for topping)
  • 1/4 cup unsalted butter, melted (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, beat the softened butter until creamy. Add the eggs, vanilla extract, and sour cream, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the diced apples.
  5. In a separate bowl, beat together the cream cheese, sugar, egg, and vanilla extract until smooth.
  6. Spread half of the apple batter into the prepared baking pan. Pour the cream cheese filling over the batter, then dollop the remaining apple batter on top.
  7. In a small bowl, mix together the brown sugar, oats, flour, cinnamon, and melted butter until crumbly. Sprinkle this topping evenly over the cake.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for at least 15 minutes before slicing.

Notes

  • For a lighter version, substitute Greek yogurt for sour cream and use a sugar substitute.
  • You can also add chopped nuts to the topping for extra crunch.
  • For a seasonal twist, try adding a teaspoon of nutmeg or a handful of raisins to the apple batter.
