- 2 cups strawberries, hulled and diced
- 1 cup blueberries
- 1 cup kiwi, peeled and diced
- 1 cup pineapple, diced
- 1 tablespoon fresh lime juice
- 1 tablespoon honey (or to taste)
- 1/4 teaspoon cinnamon
- 1/4 cup fresh mint leaves, chopped
- In a large mixing bowl, combine the diced strawberries, blueberries, kiwi, and pineapple.
- In a small bowl, whisk together the lime juice, honey, and cinnamon until well combined.
- Pour the lime mixture over the fruit and gently toss to coat all the fruit evenly.
- Add the chopped mint leaves and fold them into the fruit salsa.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled with tortilla chips or as a topping for desserts like ice cream or yogurt.
Notes
- For added crunch, consider mixing in some chopped nuts like almonds or walnuts.
- Substitute the fruits based on seasonal availability; peaches and raspberries work great in summer!
